Cinco de Mayo & Foodie Friday!

It’s finally Friday! And Cinco de Mayo at that! I’d say it’s time to celebrate! I cleaned off my grill, got a new propane tank, and was ready to kick off the month of May in style. Check out these Grilled Steak Tacos you can serve tonight!

I started with an inexpensive cut of steak, the flank. It can be a tough cut, which is why the marinade is so important! I was able to marinate overnight, but as long as you have at least 2 hours, it’ll be amazing!

Ingredients:

  • 2-2 1/2 pound flank steak
  • 1/4 cup olive oil
  • 2 tablespoons vinegar (white, red wine, or I used apple cider because that’s what I had on hand)
  • 4-5 cloves minced garlic
  • The zest and juice of two limes
  • The zest and juice of two oranges
  • lots of salt and pepper

Add everything to a gallon size bag. I like to set mine in a large dish so it doesn’t fall over while I’m using it! Marinate the steak in the fridge for at least 2 hours or overnight. Pull it out about 15 minutes before grilling so it comes to room temperature.

Grill over high heat for 6 minutes on each side. A couple minutes more or less depending on how you like your steak cooked. Mine came out medium and was perfect. Let the it rest for at least 10 minutes. I decided to char my tortillas on the grill just to give them an extra oomph. They were SO good.

Thinly slice across the grain and serve with your favorite toppings! We had fresh cilantro, salsa, and Mexican cheese called Cotija. YUM.
