Pancake Blueberry Bites

Lately my kids have been sleeping in later on school mornings (but never weekends…. Come on kid’s give mom a break!) and I’d be lying if I said I didn’t fully enjoy the extra alone time in the mornings, but sometimes it means the rest of the morning is a bit rushed between packing lunches, getting dressed, finding shoes, and making breakfast. So having some pre-made breakfast options beyond a bowl of cereal is very helpful, and these blueberry pancake muffin bites are quick to make,

So having some pre-made breakfast options beyond a bowl of cereal is very helpful, and these blueberry pancake muffin bites are quick to make and seem to disappear even quicker. And for a mom watching her calories they are only 41 calories each, a perfect snack with my cup of coffee that won’t blow my calories for the rest of the day.

To make these sweet bites you will need the following…

  • 2cups pre-made pancake mix
  • 1 1/4 cup water
  • 1 tbsp honey (or real maple syrup, which has fewer calories than honey)
  • 1 cup frozen blueberries
  • 1tbsp flour
  • 1/4 tsp vanilla extract

Preheat oven to 350 degrees. In a medium bowl, mix the frozen blueberries and flour together.

This is a trick my grandma taught me, helps keep the berries from sinking to the bottom of the batter.

Next, in a large bowl, mix the pancake mix and water, honey (or maple syrup) and vanilla extract.

Then slowly stir in the blueberries using a spatula.

Then using a tablespoon, divide the batter up into a 24 mini muffin tin.

Bake for 12 mins, until golden brown.

Cool slightly before removing from pan.
