I’m always trying to sneak veggies in the food I cook, not for my kids… they always ask to snack on carrots and cucumbers…I sneak them in, for me 🤣

So I have gotten creative…
I have learned I am obsessed with cauliflower because it is rich in vitamins and minerals and is very versatile…but don’t worry, I’m not going to have you sub it for pizza crust or rice, because there are some foods you just cant mess with.
BUT I did find ways to sneak my veggies in without sacrificing taste, and flavor!
I buy frozen riced cauliflower and take a cup and blend it with milk/ water and i add protein powder.
Put it in any smoothie and you’ll have a creamy delicious and veggie packed smoothie that isn’t green 🤢 and the best bart? you don’t taste it!
For every pound of taco meat I add a bag of frozen cauli rice and use a packet and a half to two packets of taco seasoning.
You won’t even be able to tell it’s packed with veggies.
You can do this with any ground meat that is well seasoned.
I’ve also done this with chorizo, so good!

Take out the dairy and sub with cauli rice… Hear me out!
Microwave the frozen cauli rice, once cooked add some chicken stock, season with salt and pepper into a blender and blend until a creamy consistency and add it to your soup to make it creamy and delicious!
Mashed Cauli “Potatoes”
I LOVE cauli mash! I usually do a bag of microwaveable cauliflower rice and add a cooked potato or two once cooked, put into a blender and add butter, a little bit of cream cheese and viola! Creamy delicious veggie packed mashed potatoes.
Egg Casseroles and Frittatas
I always add a bag of frozen cauliflower rice to any egg dish/recipes I make such as casseroles, and frittatas. Another dish you wont even know you’re eating veggies!
