It’s Foodie Friday y’all! I’m here with a quick and easy dessert for you to try this summer. Anyone have a summer birthday? ::raises hand:: ME! In fact, both my kids are summer babies as well. So, to help celebrate all the birthdays this summer, I decided to whip up some No-Bake Cake Batter Truffles! YUM!

This recipe is REALLY simple. You can use any cake mix you’d like. We picked Pillsbury Funfetti cake because SPRINKLES!

1/2 cup softened butter

1 1/2 cups cake mix

1/2 cup sugar

1/2 cup all purpose flour

That’s it for the filling!

Blend the ingredients up until a dough forms. Speaking of birthdays, check out new present! Isn’t she a beaut?! Another reason to whip up some truffles. I had to take my new mixer for a test drive!

After the dough has formed, I stirred in two extra tablespoons of sprinkles. Can you ever have too many sprinkles? (That answer is NO in this house!)

Using a cookie scoop or tablespoon, scoop out your truffles. If you need a big batch, I recommend doubling the recipe OR using a smaller scoop. My truffles ended up being about the size of cake pops and I got 18 out of the dough.

Stick them in the freezer for 15 minutes. Or if your pan doesn’t fit (like mine! HA!) they can go in the fridge for 30-45 minutes. I used vanilla almond bark for the coating, but you can use candy melts, melting chocolate, or even chocolate chips for your top layer. I used 5 blocks of almond bark and 1 teaspoon of vegetable oil for a nice shine.

Dunk your truffles and using a couple forks set them back on your cookie sheet. Add a few extra sprinkles to the top for decoration, if desired.

How cute are these guys? I put them back in the fridge for at least 10 minutes before serving.

If you need a quick dessert for your 4th of July party, just decorate with patriotic sprinkles! Celebrate our nation’s birthday this summer with easy cake truffles!

These truffles were so incredibly simple to make. Did I mention they were NO BAKE? Try them out with your favorite cake mix! I think my next batch will definitely include some dark chocolate. Enjoy! And Happy Birthday to all the summer babies this season!

People, people everywhere! I gather you all here to tell you a love story for this Fun Foodie Friday. It is a love story that started with my boys complaining about the last bit of “the good cereal”, you know the kind, the one with the little marshmallows, and ended with what became true love. You see, this story is not like most, it is a sweet and salty story, kind of like my grandma that’s been married seven times. But THAT’S another story.

Anyway, the battle of the cereal was happening and I was on the forefront of the war. I couldn’t win and I knew I wasn’t going to. I stopped both of them and just told them if they could put down their swords for about 20 minutes or so and stop fighting for the last bit of “the good cereal” and just share it as a morning snack, that I would make them the best breakfast they had ever had! I would dazzle and delight them with a breakfast fit for royalty.

Boy did this get them hyped! They were officially intrigued.

I don’t know how I came up with this, however, I seriously couldn’t handle Luke and Carter going at it anymore. So I happened to remember that I had Pillsbury Cinnamon rolls and some sausage links in the fridge. Sounds like a normal breakfast, there was no way my boys would be satisfied with just that after the speech I gave about being the breakfast queen. I stood in the kitchen for a minute and thought that maybe I had lost my mojo. Maybe I was just a cookie cutter mom. Oh my goodness, was I boring?! Maybe I just had no fight left in me. And with all boys in the house…you NEED fight! I refused to accept defeat! So I thought for one more minute before I had the idea that led to this beautiful love story!

Pigs in a blanket, SOUPED-UP.

1 can Pillsbury cinnamon rolls

Your favorite sausage links

Start by preheating your oven to 350 degrees.

Prepare a baking pan with aluminum foil and non-stick spray.

Cook your sausage until browned and evenly cooked on the outside.

Unroll each cinnamon roll, spreading and smushing the dough.

Lay one sausage link at one end and wrap. Pinch the ends to seal.

Bake for 8-12 mins, depending on your oven. Just watch them. DON’T let them get too browned.

When done, let cool one minute while you open the frosting that came with the cinnamon rolls.

Glaze each one…then prepare for utter and instant LOVE!

This cinnamon, savory goodness was LEGIT. I would be surprised if anyone didn’t like this. The sweet and salty goodness won this war and turned it into a beautiful love story. The boys were not only happy, but I was as well. It was how I was able to put up my flag on my kid’s territory and forever be the Queen of Breakfast. And thankfully I can now officially say….I am not a boring mom.

Soup and grilled cheese! They go together like pb&j, bacon & eggs, and milk & cookies! There is nothing better than a warm bowl (or mug) of your favorite soup with a grilled cheese. My husband loves a good potato soup, but my boys and I LOVE tomato soup! I have the best memories from my mom making me Campbell’s tomato soup and grilled cheese when I was a kid and it’s a tradition I have kept going with my own! There is something nostalgic about making your kids a meal that was a favorite that your own mother made for you. But sometimes you just need to mix it up a little, or sometimes in my case, I run out of white bread (otherwise known as the ONLY bread, besides sourdough, that should ever even be considered when making a grilled cheese!) and come across a can of crescent rolls in your fridge and inspiration strikes.

But sometimes you just need to mix it up a little, or sometimes in my case, I run out of white bread (otherwise known as the ONLY bread, besides sourdough, that should ever even be considered when making a grilled cheese!) and come across a can of crescent rolls in your fridge and inspiration strikes.

Thankfully my gut idea paid off and these were delish! The best part is they are so quick and easy that my boys can make them themselves once I have prepped and assembled the ingredients for them. They have quickly become a family favorite, that I’ve already made them twice this week. We are currently experiencing an ice and snow storm, so comfort food is a must for any cold day. These bites are so versatile that you can mix and match your favorite cheese with the soup of your choice! Use some pepper jack with a spicy chicken quesadilla soup, or Colby with your corn chowder. But cheddar is the only way to go when it comes to tomato soup hands down! They would also make fantastic appetizers for the BIG GAME!

Ingredients

One can crescent rolls

Cheese sliced into long chunks

2 tbsp. melted butter

1/2tsp garlic salt

Unroll the crescent rolls and separate into 8 pieces

Using your fingers, smush the rolls with your fingers, flattening out the edges as much as you can

Mix the garlic salt into the melted butter, and brush on the crescent roll.

Lay out your cheese and roll the crescent roll up around the cheese.

Place on aluminum foil that has been sprayed with nonstick spray and brush the tops with the rest of the melted butter.

Repeat for each crescent roll.

Bake at 350 degrees for 10 to 15 mins, or until the cheese is melted and the rolls are golden brown

Let the rolls sit several mins for the cheese to firm back up.
