<p><strong>Roasted Vegetables: </strong>Preheat oven to 425ºF. Toss together sweet potatoes, carrots, parsnips, orange juice, olive oil, garlic, turmeric, cumin, paprika, salt, pepper and cayenne (if desired). Arrange in single layer in parchment paper-lined baking sheet.</p>
<p>Bake, turning once, for 35 to 40 minutes or until golden brown and tender.</p>
<p><strong>Topping:</strong> Meanwhile, stir together lemon juice, tahini paste, olive oil and 1 tbsp water until smooth. Stir in ranch dip and paprika.</p>
<p>Arrange roasted vegetables on platter and drizzle sauce over top. Garnish with cilantro.</p>
<p><strong>Tip: </strong>Change up the vegetables: use potatoes, butternut squash and beets if desired.</p>

										<content:encoded><![CDATA[<p>Everyone is always looking for easy dinner ideas. Especially with today&#8217;s constant feeling of go go go. I know with kids, and sports, etc I appreciate easy dinners way more than I used to!</p>
<p>But sometimes easy doesn&#8217;t always equal healthy. But with this one pan chicken meal you can prep it, pop it in the oven, and walk away! That&#8217;s it. Unless you want more side dish options, what you toss in the pan is it. One pan to wash. And it&#8217;s so easy to make that it&#8217;s a kid-friendly meal the kids can help prep! Cutting veggies are not only fun for kids but they are also more likely to eat the veggies they helped prepare!</p>
<p>Start with a large glass pan. Spray with non-stick spray. In the pan place your favorite chicken. This recipe it doesn&#8217;t require measurements! Just cook as many as you need for your family size. This dish is also great if you are a meal prepper! Make one weeks worth of lunches in one go!</p>

<p>Now, we prefer boneless skinless thighs, but also rotate between using chicken breasts as well as bone-in thighs and legs. Next, decide on what vegetables you want. If your using chicken breasts, which cooks faster than bone in pieces, you&#8217;ll want veggies that have a similar cooking length. Peppers, onions, zucchini, squash, gren beans,even corn on the cob. But with bone in pieces, which take longer, we like to add frozen green beans for an extra roasted taste, potatoes, carrots, broccoli, even brussel sprouts. Once you have everything in the pan, then lightly drizzle olive oil over everything. Top with one package of dry Italian salad dressing mix. Adding additional salt and pepper if needed. Cover with foil and bake at 375 degrees for breasts and 425 degrees for bone-in pieces for 45 mins. Remove foil and place pan back in the oven under the broiler for 5 mins.</p>

<p>And there you have it&#8230; One pan chicken and vegetables. Everything you need but also great with a salad or garlic bread.</p>
