Crockpot Blueberry Cobbler

You may have noticed that I LOVE using my crockpot! It is so easy to use and is fast to clean up, AND it doesn’t heat up your kitchen like the oven does. So, it shouldn’t shock you that I found a new way to use it…making dessert! Oh My Yum! This Blueberry Cobbler recipe is super simple and absolutely delicious! You will want to add this into your menu on the regular!

Ingredients:

  • 6 cups Blueberries
  • 1/2 cup Brown Sugar
  • 1 T Cinnamon
  • 2 T Corn Starch
  • 1 Can Refrigerated Biscuits

Directions:

  • Combine the brown sugar, cinnamon, and corn starch in a small mixing bowl.
  • Pour the mixture over the blueberries in a large mixing bowl.
  • Stir until the blueberries are coated with the mixture.
  • Quarter each refrigerated biscuit and set aside.
  • Line your crockpot.
  • Pour in the blueberry mixture into the crockpot.
  • Sprinkle the quartered biscuits around the whole crock-pot.
  • Set your crockpot on high for 2.5-3 hours, when you biscuits are golden brown.
  • Serve warm and enjoy!

Notes:

  • You could use a brown sugar substitute if you want. Just follow the package for equivalent amounts.

  • I wondered about doing a cinnamon sugar bowl to roll my refrigerated dough bites into to a bit more pizzazz to it, but I will have to try that another day!

As you can see, we also added in a scoop of vanilla ice cream when we served it. The ice cream slowly melted and made it even yummier! I hope you family enjoys this super easy dessert as much as mine does!
