Chicken for dinner is a staple in our house. We are talking 4 times a week folks. It’s cheap. It’s versatile. And it’s lean and healthy. But sometimes you need to mix it up to keep yourself from getting bored. Nobody likes the same chicken over and over.
This is why Hasselback chicken is perfect. You can stuff it with almost anything you can think of. Make it cheesy. Make it extra savory. Or load it with your favorite veggies. Anything is possible! Or just add bacon, because bacon makes everything better!
This combination is my personal favorite. Creamy ricotta cheese with some healthy spinach! Gotta mix it in when I can and hide it to sneak it to the kids! They will thank me some day!
To make them you will need…
- Two large chicken breasts
- 1/2 cup ricotta cheese
- 2 cups spinach
- 1/4 cup cheese (I use mozzarella)
- 1tsp olive oil
- 1 tsp seasoning salt
- Salt and pepper to taste
Preheat your oven to 400 degrees. Then start by cutting slits into the chicken, about half and inch apart, making sure not to go all the way through the bottom of the chicken. Season both sides with salt and pepper then set aside.
In a pan over medium-high heat, heat the olive oil and cook the spinach until wilted. Once wilted mix in the ricotta cheese and seasoning salt and stir until melted. Remove from heat and let cool for a few minutes.
Then spoon the mixture into each slit, and top each piece with cheese.
Bake for 25-35 minutes, depending on the thickness of each chicken piece.
