Pepsi Pancakes!

When I think of spring I think of flowers, warmer weather and brunch. I love recipes that enhance old staples and takes them to the next level. These Pepsi pancakes do just that. You can use your favorite pancake recipe and add 3 tablespoons of Pepsi but if you don’t have one I will share mine.

You will need:

1 1/2 cups of flour

3 tablespoons of sugar

1 1/12 teaspoons of baking powder

1/2 teaspoon of salt

1 1/2 cups of milk

2 eggs

3 tablespoons of oil

3 tablespoons of Pepsi

 

First heat and grease your griddle or skillet. Next add your dry ingredients: flour, sugar, salt, and baking powder to a bowl and mix them together.

 

In a different bowl mix your wet ingredients: eggs, milk, oil, and Pepsi.

Pour the wet ingredients into the dry ingredients and mix well.

Once you are done mixing let the batter sit for 5 minutes. You can also make this the night before if you’d like.

Pour 1/3 cup of batter onto hot griddle or skillet.

Wait until the there are bubbles on the pancake and then flip (approx. 2-3 min).

Let them cook an additional 2-3 min on the other side.

Take the pancakes off and place them on a plate.

These pancakes are great! The Pepsi gives them a great cinnamon flavor. They are light and fluffy and you will be sure to enjoy this recipe.
