Sometimes you discover the best recipes completely on accident. Has that ever happened to you? A disaster that turned into something wonderful. Well, here’s my story, and for maximum effect I’ll need to start from the absolute beginning… when I woke up. We’ve all have those days where you step foot out of bed and Murphy’s Law smacks you right across the face. Right? Yeah, so…

My eyes popped open at 6:30 a.m. That wouldn’t be so bad if it weren’t a SATURDAY and I awoke to the sound of my 5 year old screaming at the top of her lungs because our cat had snuck into her room and jumped on top of her dresser, knocking over two picture frames which scared the living bajeezus out of her and resulted in somewhat of a panic attack. If you were wondering, our cat has just recently learned how to open up doors. Yes, really! I raced to my daughter’s bedroom to find out what was wrong and stepped in cat puke in the hallway (I can’t make this stuff up!) and proceeded to spend at least 10 minutes singing the same lullaby on repeat to calm her… while trying to keep my foot off the ground. Fast forward a bit and I’m cleaned up and we are downstairs getting our day started. My 11 year old comes storming down because she forgot to set her alarm and now she’s late to meet her friend outside. In case you didn’t know, this is of course all my fault. I asked her to eat breakfast before going out and it turned into an argument about how life is so unfair (this pre-teen stuff is serious, y’all) and next thing I know my 5 year old is chiming in, “Umm, Mom? There’s a snake in the house! By the window!” FREAK OUT MOMENT! It was just a lizard. A little ‘ole skink lizard that popped through the screen of our open window but I didn’t discover this until 5 minutes (translated: an ETERNITY, when you think it’s a snake) after searching for him. Then I chugged my cup of coffee for a bit of encouragement to face the rest of the day and proceeded to begin making strawberry muffins. Out of a bag, no big deal. Unbeknownst to me, while I was snake hunting, my oldest daughter grabbed a bowl of Froot Loops and poured the very last of the milk in her bowl. Now that I was searching for the milk to make my muffins, I realized this and flipped. Why did she have to use the rest of the milk? Her response- didn’t I ask her to eat breakfast? I was ready to cancel the whole day and go back to bed. But nope, mama’s just have to pull up their big girl pants and handle it. Before she started eating her cereal I asked her if I could borrow some of her milk back, just a 1/2 cup, and promised her that the muffins I was making would be worth it. Because Mama had an idea!! And that is how my Strawberry Froot Loop Muffins with a White Chocolate drizzle came to be, followed by quite the series of more unfortunate events throughout the day but, that’s a story for another time…

These muffins are amazing!! They are fruity, a little chocolatey, and made with cereal milk so they are perfectly sweet. You know how when cereal sits in a bowl of milk, the milk absorbs the flavor of the cereal? Oh yeah. These muffins are made with sweet, Froot Loop® cereal milk. And that was the best decision ever! (Thank you, attitudinal pre-teen that I love oh so dearly, I really do.)

This is all you need!!

1 cup Kellogg’s® Froot Loop® cereal, divided

1 package strawberry muffin mix

Milk required to make muffin mix, as directed on package

White chocolate chips

Step 1) Measure the milk needed for the muffin mix (in my case it was 1/2 cup) and add 1/2 cup Froot Loops® to it. Let sit about 20 minutes.

Step 2) Crumble the remaining 1/2 cup Froot Loops® and add to the muffin mix. Then add the milk, with the Froot Loops® and all! You may choose to strain the cereal out, but, why? Mix everything together until the muffin mix is just moist.

Step 3) Pour the batter into cupcake liners and bake as directed on the muffin package.

Step 4) While muffins are finishing in the oven, melt a small handful of white chocolate chips with a small splash of milk in the microwave. Stir until it’s creamy and drizzle over muffins. Top with a bit of crumbled Froot Loops® and serve!!

My 10 year old (going on 21, dontcha know!) begged me and begged me to stock up on cereal. I would attempt a hot cooked breakfast for her every morning before school and she would fuss at me for making it! Who does that!?? So I finally gave in and allowed her the responsibility of preparing her own breakfast… and she was happier than a seagull with a french fry. This, in turn, turned our pantry into a closet full of cereal boxes. And can you guess what happened about three weeks later? Said 10 year old child decided she did, in fact, wish to have Mama’s homemade breakfasts again, after all. Hey, hey!!! Another point for Mama!!

Now… to get rid of all of that cereal!! I did a little digging around and found this amazing Cornflake Muffin recipe. At first I was a little unsure – the crunch of Corn Flakes® inside the tenderness of a warm muffin? But the trick is letting the Corn Flakes® soak in milk for a few minutes and then using them in the batter!! Oh my world, I’m so glad we gave these muffins a go! Annnnnd… we have used up an entire box of cereal just by making these muffins alone! These have become a regular weekend treat, I tell ya!

If you have a box of Corn Flakes® laying around waiting to be used, or if you’re looking for something to spice up your routine breakfasts, then this recipe is for you. This is all you’ll need:

INGREDIENTS

1 1/2 cups all-purpose flour

1/4 cup sugar

1 tablespoon baking powder

1/4 teaspoon salt

1 1/4 cups fat-free milk

3 tablespoons vegetable oil

1 egg

2 cups Kellogg’s Corn Flakes® cereal

This will yield 12 muffins!

*Note: if you do not have granulated sugar, brown sugar will substitute just as well! 1/4 cup granulated = 1/4 cup brown sugar! Yep… that is tried and true.

Step 1) Stir together flour, sugar, baking powder and salt. Set aside.

Step 2) In large mixing bowl, combine Corn Flakes® cereal and milk. Let stand 2 minutes or until cereal softens. Add egg and oil. Beat well. Add flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray.

Step 3) Bake at 400° F about 20 minutes or until lightly browned. Serve warm.

I prefer to add butter and a little maple syrup!

These are also perfect outside of breakfast… they compliment stews, soups, and salads very well!

Let me know how much you love them!!
