Vanilla Pomegranate Bites

We’re back and it’s the FIRST Foodie Friday of 2018! Woohoo! Now, I know we’re all going to be getting into the healthy eating groove so, with that in mind, I decided to whip up a healthy snack to keep us all on track! These Vanilla Pomegranate Bites are SO YUMMY! Not only are they easy to prepare, they taste like FRO-YO! My kids went bananas over them. They make a great after dinner treat, a perfect snack for after school, or even a quick breakfast bite when you’re begging your kid to just. eat. something. (Anyone else have that problem?) 😉

Vanilla Pomegranate Bites

  • Your favorite yogurt flavor. I LOVE Yoplait’s Oui Vanilla yogurt. It’s so rich and decadent.
  • Pomegranate arils (seeds). You can buy just the arils or grab a pomegranate since they’re in season.
  • Ice cube tray or silicone mold tray

Alright guys, the hardest part of this recipe is getting the arils out of the pomegranate! I like to use a bowl of water to peel them out of the pith. It’s so easy! The seeds sink to the bottom and the pith/peel floats to the top. No juicy mess all over your counter!

Simply add the yogurt to your mold. Give it a few taps on the counter to make sure there are no air pockets. Press a few pomegranate seeds into the yogurt until they’re mostly covered. Next time I make these, I might add a few seeds before adding the yogurt so there’s even more goodness in each bite!

Stick the molds in your freezer. It’ll take a few hours to completely freeze. Pop them out of the mold and try not to eat them all in one sitting! 🙂 The yogurt is soft and creamy and the pomegranate is, of course, a nice burst of juicy tartness. They pair so well together.

I love the little surprise bite of pomegranate in the frozen yogurt. It’s the perfect healthy treat!

The silicone mold I used is from Amazon, but like I stated before, you can use a regular ice cube tray too! Once you take them out of the mold, stick them in a ziploc bag and keep them in the freezer. Grab one whenever you need a quick treat!
