Pecan Pie Truffles

It’s been a busy week in our household. Yes, Halloween was nice, but I’m talking about Thanksgiving planning! Is it too early to start planning out your menu? NEVER! We love Thanksgiving and going all out and this year will be no exception. I wanted to try out a few new recipes early to see how they go over with my guys. Now, you may not know this about me, but I don’t really love the more traditional Thanksgiving desserts. I could actually do without the pumpkin and pecan pies. They just don’t do it for me! While perusing Pinterest for different desserts, I came across the blog Miss Candiquik and a recipe for Pecan Pie Truffles! I knew I had to try them out. Truffles are SO popular right now. They’re easy, individual, and super fun to make! Did I mention they’re NO BAKE?! I’m obsessed with them right now as evident by the Reeses Truffles and Cake Batter Truffle recipes I’ve blogged about previously!

Pecan Pie Truffles

To start, pound your cookies into crumbs. You can do this with a food processor or in a ziploc bag. I chose the bag because it’s one less dish I’ll have to wash later! 😉 Pour your cookie crumbs into a bowl with the cream cheese and maple syrup. Mix thoroughly.

I made my truffles with a cookie scoop, but you can use a tablespoon or even a regular spoon! Refrigerate them for at least 30 minutes.

Melt 12 ounces of almond bark, candy wafers, or white chocolate chips to dip your truffles in. I like the almond bark because it hardens nicely and doesn’t melt on your fingers. It’s also readily available. Mix 1 teaspoon of cinnamon into the melted candy coating.

Dip your truffles into the cinnamon topping and immediately top with a few pecan pieces. Continue until all your truffles are dipped! This recipe made 18 truffles and I know I’ll have to double it for Thanksgiving. They are the PERFECT bite of pecan pie. Even non-lovers, like me, love these truffles!

Once they’re all coated, stick them back in the fridge to harden. Store in a plastic container or ziploc bag, if you have any left (I doubt you will!)

Truffles make a such a fun and easy dessert. You can do a bunch of different flavors and everyone is sure to eat them up!
