Who doesn’t have a little sweet tooth?! We love to feed that little sweet tooth when we’re having a great day, celebrating a good week or even sometimes to get us through a bad day.
We have a delicious and super simple recipe we love that uses CHips Ahoy cookies and Ice Cream! YUM!! You can use any Chips AHoy cookie, but we prefer to use Chips Ahoy! Thins. These cookies are super thin, crispy and have just enough chocolate chips to be a great snack item!! I can definitely say this recipe was VERY easy and even the kiddos can help make it! My daughter loves rainbow colors, so we use rainbow sprinkles, but you can use any color you’d like!
Now, let’s get to the good part, the recipe!
Chips Ahoy! Ice Cream Sandwiches
INGREDIENTS:
- 1-1/2 cups Vanilla Ice Cream, somewhat softened
- 1 Package of CHIPS AHOY! Thins Cookies
- 1/2 cup multi-colored sprinkles (or a color of your choice)
INSTRUCTIONS:
PLACE a spoonful (we used an Ice Cream scooper) of Ice Cream on one cookie.
MASH the Ice Cream slightly to flatten it just a little bit.
PLACE a cookie on top of the Ice Cream to make sandwich.
ROLL the edges of the Ice Cream in the sprinkles.
FREEZE for a couple hours, or until firm.
