Bring Out Your Crockpot: It’s Time to Make an Easy Vegetable Soup!

Are you ready to dust off your crockpot and make some superb soup? I love any recipe that’s quick, easy, and flavorful. The air is starting to get cooler, and this is the perfect time to enjoy a hearty bowl of soup with some cornbread, crackers, or a loaf of crusty bread on the side. We have a recipe that is so delicious and super easy that all you have to do is enjoy this sweater weather and prepare to get cozy. So, grab your slow cooker and get ready to set it and forget it!

Ingredients

  • 1 Can Whole Kernel Corn, drained
  • 1 Can Cut Green Beans, drained
  • 1 Can Sliced Carrots, drained
  • 1 Can Whole Potatoes, drained
  • 5 Cups Vegetable or Chicken Broth
  • 2 Cans Diced Tomatoes, undrained
  • 1 Cup sliced celery
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Preparation

  1. Add all ingredients to crockpot and cook for 3 hours on high heat.
  2. Add additional salt and pepper as desired
  3. Optional – You can add cooked ground beef or turkey for a hearty soup.
