I have a bubbly, sparkly soon-to-be 7-year-old who was looking for that special birthday treat for her family birthday dinner this year. Since her party will be limited to her and her siblings this year, we wanted to be sure she has a very special day at home. When we were searching for the perfect dessert for my daughter’s birthday, the metallic, rainbow packaging of the OREO 110th Birthday Edition Chocolate Confetti Cake jumped right off the shelf as we walked down the cookie aisle. She knew right away these cookies would be the perfect addition to her birthday celebration and we found the perfect recipe to highlight them.

OREO Ice Cream “Cupcakes”

Prep time 15 min Total time 3 hr 15 min Servings Makes 12 servings, 1 “cupcake” each.

Ingredients

  • 18 OREO Cookies, divided
  • 3 Tbsp. butter, melted
  • 1 qt. (4 cups) cookies and cream ice cream
  • 1/4 cup chocolate syrup
  • 1-1/2 cups thawed frozen whipped topping
  • 1 Tbsp. multi-colored sprinkles

Preparation

  • Cut 6 cookies in half; reserve for later use. Finely crush remaining cookies.
  • Combine cookie crumbs and butter; press onto bottoms of 12 paper-lined muffin cups.
  • Top each with 1 scoop ice cream, using a 1/3-cup scoop. Drizzle with syrup; top with whipped topping, sprinkles and reserved halved cookies.
  • Freeze 3 hours or until firm.

Recipe Tips

Note

These frosty desserts can be frozen up to 24 hours before serving. Even if you’re having a small gathering, make the full dozen. The leftovers will keep, tightly wrapped, in the freezer for several days before serving.

Shortcut

Omit butter. Cut 6 cookies in half as directed. Place remaining (whole) cookies in paper-lined muffin cups; top with ice cream, then continue as directed.

 

These ice cream cupcakes were so delicious. The cookies and cream ice cream paired perfectly with the limited-edition OREOs. They were so good that we made extra and have more stored in the freezer for whenever we see fit.
