Pepperoni Grilled Cheese Sandwich

Sometimes a kid just wants a grilled cheese and his brother wants pizza but this mom doesn’t want to make two separate lunches… Cause ain’t nobody got time for that! So this is when you get creative and hope the troops don’t rebel when you present the final outcome!

Pepperoni grilled cheese! So basic and so simple, with creative possibilities everywhere! Between two slices of your favorite bread… For us, grilled cheese is best on white bread.

Something about the way it turns golden brown and crisps up perfectly. Sorry, but wheat bread just doesn’t have the same appeal! Anyways… Pizza grilled cheese could go any number of ways. Instead of pepperoni, you could fill with veggies, sausage or ham, and pineapple! You could drop a dollop of marinara in the middle, or us it as a dipping sauce. The options, like pizza, are endless

Start with two slices of your favorite bread. Butter the outside with softened butter. Lay butter side down into hot skillet and start with one slice of Mozzarella cheese. Top cheese with your favorite pizza toppings. My two boys are simple pepperoni lovers. Turkey pepperoni, which is lower in fat, aka grease, is perfect for these sandwiches so they don’t get soggy from the grease. Turkey pepperoni for the win! Then place another slice of cheese over the toppings, and top with the last piece of bread. Cook over med-high heat.

 

Patience is key to a perfectly golden grilled cheese. Once the bottom piece is golden brown, flip and repeat. Remove from pan after both sides are down to your liking and let rest for 2mins. This gives the cheese a chance to harden up so it doesn’t just ooze out when you cut in half because cutting a grilled cheese, especially into triangles is required.

Serve with marinara on the side for dipping, or with your favorite soup.
