Pepsi Icing

This is a recipe that you’ll want to give a try and it’s right in time for all of your Valentine treats. Here is what you will need.

2 cups of Pepsi

3 1/2 cups of powdered sugar

2 stick of butter

2 tablespoons of milk

Take the Pepsi and put it in a pot on top of the stove. Bring it to boil and allow it to boil for 20-30 minutes. Stir sparsely.

The Pepsi should reduce down into a thick dark liquid. Once the Pepsi is reduced, refrigerate for 15-20 minutes.

Put the two sticks of butter in the bowl and beat for 1 minute.

Add the powdered sugar. Combine.

Add the 2 tablespoons of milk and combine.

Add the cooled Pepsi syrup and stir for 3 minutes.

Be sure the Pepsi is chilled so that your icing doesn’t split. Once done spread on your cake, cupcakes, and maybe even cookies.

The Pepsi taste in this icing is so delicious and will be sure to add some pizazz to a basic cake recipe. You could even add food coloring if you wanted, although I do like the cream color of the icing as is.
