This Easy Recipe Will Become Your New Fall Favorite Soup!

When the weather cools down nothing makes me happier than curling up with a cozy blanket and enjoying some of my favorite comfort foods. Nothing says fall like apple picking, corn mazes and your favorite soup & Premium Cracker pairing. We have a recipe that is sure to be a hit in your kitchen; so, head over to your local Commissary and stock up on Premium Crackers this Fall season! 

Mexican Fiesta Soup

Prep Time: 15 mins   Total Time: 15 mins   Makes: 3 servings

Ingredients

  • 1 can (19 oz.) black bean soup
  • 3/4 cup drained canned corn with red and green bell peppers (half of 11-oz. can)
  • 1/4 cup salsa
  • 3 Tbsp. light sour cream
  • 15 PREMIUM Saltine Crackers

Directions

1. Cook soup, corn and salsa in a saucepan on medium heat for 5 minutes or until heated through, stirring occasionally.

2. Ladle into soup bowls; top with sour cream.

3. Serve with crackers.

Tips

Special Extra

Serve topped with shredded reduced-fat cheddar cheese, chopped jalapeño peppers and/or fresh cilantro.

Serving Suggestion

Serve over hot cooked rice.

Special Extra

Add 3/4 cup chopped cooked chicken to ingredients in the saucepan before cooking as directed.
