Our Cozy Breakfast Favorite: Cinnamon Roll Pancakes

Fall is upon us and that means all the cozy fun vibes. It doesn’t get much cozier than a delicious batch of cinnamon rolls, but if you’ve ever made them from scratch you know that this can really be a labor of love. If you’ve got a craving for cinnamon rolls but are a little short on time this pancake recipe is just perfect for you! So, grab your favorite pancake mix or whip up your favorite batter, and get ready for a real treat.

Supplies:

Ingredients:

  • Your Favorite Pancake Mix

Cinnamon Filling:

  • 1 Stick of Butter
  • 1 Tablespoon of Cinnamon
  • 12 Tablespoons of Light Brown Suguar

Powdered Sugar Glaze

  • 1 Cup of Powdered Sugar
  • 1 Tablespoon of Milk
  • Splash of Vanilla

Directions:

  • Make Pancakes per recipe on box.
  • To make cinnamon filling combine brown sugar, melted butter, and cinnamon. I added mine to a condiment squeeze bottle.
  • Cook the pancakes. When they start to bubble add cinnamon filling to pancake. You want to insert the squeeze bottle into the batter to ensure they don’t just spill over the top.
  • Flip.
  • To make powdered sugar glaze combine powdered sugar, vanilla, and milk. Mix until well combine.
  • Add glaze.
  • Enjoy!

Notes:

  • If you don’t have a condiment squeeze bottle you can absolutely use a plastic bag and just cut a corner of the bag.
  • I made a double batch of these pancakes so you could easily divide this recipe as needed. This made about 8 pancakes for us.
  • Also, you can adjust the brown sugar to your desired consistency. I had to tweak mine a little bit because I didn’t want runny filling.

This recipe was such a delicious treat and basically felt like a snuggly flannel for your stomach. It doesn’t get much more fall than that! I hope your family enjoys this recipe as much as we did. This is one that will continue to stay on our brunch rotation!
