Sourdough Tortillas

Taco night is a staple on the weekly dinner menu in my home. Nothing beats the soft and subtly tangy sourdough tortillas that are a true game-changer for taco night or a wrap night as well. Those standard store-bought tortillas often rely heavily on preservatives and artificial additives to stay stable on the shelf longer, resulting in that rubbery texture that cracks under pressure. Making them at home from scratch and incorporating sourdough starter will take your meal to a whole new level.

Beyond adding a rich, complex flavor, sourdough fermentation works behind the scenes to break down starches, making these tortillas easier to digest and surprisingly light. Best of all, they come together quickly…no lengthy fermentation or long rising times are required, making them one of the easiest ways to put sourdough discard to work while elevating your everyday meals.

Ingredients:

  • 1½ heaping cups all-purpose flour
  • ¼ cup softened butter
  • 1¼ tsp salt
  • ⅓ cup + 1 tbsp water
  • ½ cup active/discard starter

Directions:

  1. Whisk together the flour and salt before using the back of a fork to cut the butter into the flour mix.
  2. Stir the water and starter into the flour mix until it is shaggy. Then knead well for another 1-2 minutes on a lightly floured surface until the dough is formed.
  3. Cut the dough into 12 even pieces, shaping them all into smaller balls. Place them all into a bowl and cover them with a damp towel for 30 minutes to 2 hours at room temperature.
  4. After they have set for the designated amount of time on the counter, begin to roll them out. Roll each one thin in the shape of a tortilla and heat on the stovetop for approximately 60 seconds on each side.

Notes:

  • If the dough is too sticky to roll into the smaller balls then you can add small amounts of flour until it’s able to be handled.
  • These will be good for up to 5 days on the counter at room temperature or 3 months in the freezer.
  • Dough can rest in the fridge for up to 24 hours but must be put into an airtight container.

Whether you’re looking to minimize kitchen waste by using up leftover sourdough discard or simply want to elevate taco night, these homemade sourdough tortillas are sure to become a staple in your kitchen. Warm, pliable, and packed with a subtle tangy flavor, they prove that a few simple ingredients can completely transform everyday meals. Once you experience how effortless they are to make, and taste the difference in freshness, you’ll never want to go back to store-bought tortillas again.
