Brownie Blast Dessert Cups

Happy Fun Foodie Friday! I’ve got a super cute and super quick dessert recipe for you to help celebrate St Patty’s Day (or any holiday really, but we’ll get to that!) Most everyone I know loves brownies, they’re classic! But, I wanted to try to make them a little more special and I think I nailed it. These little dessert cups are GREAT for a class party, a play date, or even just an after school snack. Check them out!

Brownie Blast Dessert Cups

  • Instant Vanilla Pudding
  • 1 1/2 cups milk
  • Green Food Coloring (or any color depending on what you’re celebrating!)
  • Your favorite Brownie mix, baked according to the package. I love Pillsbury Dark Chocolate Brownie Mix
  • Whipped Cream or Cool Whip topping
  • Sprinkles!

To begin, whisk the instant pudding and milk together. I used less milk than it calls for on the box because I wanted a slightly thicker pudding so it holds up nicely against the brownie. Dye your vanilla pudding with food coloring and set aside.

Assemble your ingredients and you’re ready to assemble your dessert cups! I love using little takeout cups because they’re the perfect size of little hands AND they have a lid so you can make them ahead of time. Plus they travel well!

You can make these desserts in small glasses, ramekins, or even shot glasses for a fun dessert shooter! Start by cutting a brownie in half and adding it to the bottom of the cup. Top with a spoonful of pudding and then a spoonful of whipped topping. Add sprinkles!

SO CUTE right? It’s creamy and sweet and the brownie on the bottom is PERFECT! You can dye the pudding pink or purple for Easter, or just leave it simply vanilla! You could also add 1/2-1 teaspoon of extract to the pudding to change the flavor. For example, I’d add peppermint extract to the green pudding (if I didn’t have a kid who hated mint!) How fun and delicious would a mint brownie blast be? YUM!

Have lid, will travel! So easy for the kids to just grab one out of the fridge ready to go! Find these to-go containers near the paper plates and cups at the commissary!

The kids and I are celebrating all month long with fun green and rainbow colored foods. If you can’t have fun with your food, what’s the point?! 😉
