Don’t you just love summer? I think what I love the most is that the kids are out of school and I don’t have to worry so much about making a huge or fancy dinner every night of the week. I love making light meals and finding some easy side dishes and desserts geared toward cooling everybody down. One of my go-to sides is an easy pasta salad that only requires a handful of ingredients. It pairs well with burgers and hotdogs, so you can’t go wrong with it on any summer dinner plan!
Ingredients
- 1 Box of Pasta
- 2 Cucumbers, diced
- 2 Large Tomatoes, diced
- 2 Cups Shredded Cheddar Cheese
- 1 Bottle of Italian Dressing
Directions
- Cook the pasta according to directions on the box.
- Place drained pasta into a large bowl.
- Add in tomatoes and cucumbers.
- Stir in the shredded cheese.
- Coat the mixture with the Italian dressing.
- Chill for at lest 2 hours or until ready to serve.
- Enjoy!
Notes:
- My pasta shape preferences are bowties or rotini, but any will work!
- You can customize this pasta salad by adding in red onions, olives, bell peppers, salami, or mozzarella cheese. The possibilities are endless!
- For best results, let it chill overnight!
