Easy Summer Pasta Salad

Don’t you just love summer? I think what I love the most is that the kids are out of school and I don’t have to worry so much about making a huge or fancy dinner every night of the week. I love making light meals and finding some easy side dishes and desserts geared toward cooling everybody down. One of my go-to sides is an easy pasta salad that only requires a handful of ingredients. It pairs well with burgers and hotdogs, so you can’t go wrong with it on any summer dinner plan!

Ingredients

  • 1 Box of Pasta
  • 2 Cucumbers, diced
  • 2 Large Tomatoes, diced
  • 2 Cups Shredded Cheddar Cheese
  • 1 Bottle of Italian Dressing

Directions

  1. Cook the pasta according to directions on the box.
  2. Place drained pasta into a large bowl.
  3. Add in tomatoes and cucumbers.
  4. Stir in the shredded cheese.
  5. Coat the mixture with the Italian dressing.
  6. Chill for at lest 2 hours or until ready to serve.
  7. Enjoy!

Notes:

  • My pasta shape preferences are bowties or rotini, but any will work!
  • You can customize this pasta salad by adding in red onions, olives, bell peppers, salami, or mozzarella cheese. The possibilities are endless!
  • For best results, let it chill overnight!
