EGGS-cellent Coconut Nests

I went a little coconut crazy this week y’all! It’s my mom’s birthday week and she LOVES coconut so I decided to whip up this easy coconut dessert! It is also a great treat for Easter or Spring, too! These adorable coconut macaroon nests are a family favorite in our house, AND the recipe is incredibly simple!

Ingredients:

  • 2 egg whites
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 3.5 oz. shredded coconut (approx. half a bag)

Directions:

Preheat the oven to 350.

Spray a mini muffin pan with non stick cooking spray.

Mix together two egg whites, 1 tablespoon of sugar, and a pinch (1/2 teaspoon) of salt. Add half a bag of shredded sweetened coconut (7 oz.)

Add the coconut mixture to the pan and using your thumb, press down the sides and middle to make a little nest!

Bake for 25-30 minutes until golden brown.

*** NOTE – My coconut starting getting a little brown after 15 minutes, so I covered it in aluminum foil so it didn’t burn, and it worked perfectly!

Let them cool for about 10 minutes and then while still warm, add your choice of candy! I used mini chocolate eggs, but you can use your favorite Easter candy. So cute!
