Creamy Layered Artichoke Spread
Prep Time: 10 min Total Time: 30 min Makes 3 cups spread or 24 servings, 2 Tbsp. spread and 5 crackers
Ingredients
- 1 container (12 oz.) reduced-fat cream cheese spread
- ¼ cup shredded Parmesan cheese, divided
- 1 jar (12 oz.) marinated artichoke hearts, drained, chopped
- 6 TRISCUIT Crackers, coarsely crushed
- 1 Tbsp. chopped Italian parsley
Preparation
- 1. Heat oven to 350° F.
- 2. Mix cream cheese spread and 2 Tbsp. Parmesan cheese until blended; spread onto bottom of 9-inch pie plate sprayed with cooking spray.
- 3. Top with artichokes.
- 4. Combine crushed crackers, parsley and remaining Parmesan cheese; sprinkle over artichokes.
- 5. Bake 18 to 20 min. or until spread is heated through and top of spread is lightly browned.
- 6. Serve with additional crackers and/or cut-up fresh vegetables.
Special Extra
Mix 2 Tbsp. of chopped roasted red peppers with the artichokes before spooning them over the cream cheese mixture in the pie plate. Sprinkle with crushed cracker mixture, then continue as directed.

Ingredients
- 24 RITZ Crackers
- 1 pkg. (8 oz.) brick cream cheese, softened
- 12 small jalapeño peppers, cut lengthwise in half, seeded (See Note.)
- ⅓ cup shredded sharp cheddar cheese
- 6 slices center-cut bacon, cooked, each cut crosswise into 4 pieces
Preparation
- 1. Heat oven to 350°F.
- 2. Place crackers in a single layer on a parchment-covered baking sheet.
- 3. Spoon cream cheese into centers of pepper halves; then place, cream sides up, on crackers.
- 4. Top with cheddar cheese.
- 5. Insert short ends of bacon pieces into cheese filling.
- 6. Bake 3 to 5 min. or until cheddar cheese is melted.
Note
If you are unable to find small jalapeño peppers, you can prepare this recipe using 3 medium jalapeño peppers. Just cut the seeded pepper halves crosswise in half before filling with the cream cheese and continuing as directed.
For Milder Flavor
Substitute mini sweet bell peppers for some or all of the jalapeño peppers.
