It’s been a busy week in our household. Yes, Halloween was nice, but I’m talking about Thanksgiving planning! Is it too early to start planning out your menu? NEVER!
We love Thanksgiving and going all out and this year will be no exception. I wanted to try out a few new recipes early to see how they go over with my guys. Now, you may not know this about me, but I don’t really love the more traditional Thanksgiving desserts. I could actually do without the pumpkin and pecan pies. They just don’t do it for me! However, these Pecan Pie Truffles are right up my alley!
Ingredients:
- 1 Package of Pecan Shortbread Cookies
- 1/4 Cup Pure Maple Syrup
- 4 oz Cream Cheese
- Pecan Pieces for Topping
- 12 oz. Almond Bark (White Chocolate Chips or Melting Vanilla Wafers)
- 1 tsp Cinnamon
Directions:

- Pound your cookies into crumbs
- You can do this with a food processor or in a Ziploc bag. I chose the bag because it’s one less dish I’ll have to wash later!
- Pour your cookie crumbs into a bowl with the maple syrup and cream cheese
- Mix thoroughly
- Scoop into balls
- Refrigerate them for at least 30 minutes

- Dip your truffles into the cinnamon topping and immediately top with a few pecan pieces
- Continue until all your truffles are dipped


- Once they’re all coated, stick them back in the fridge to harden.
- Store in a plastic container or Ziploc bag
- Truffles make a such a fun and easy dessert.
- You can do a bunch of different flavors and everyone is sure to eat them up!

This recipe made 18 truffles and I know I’ll have to double it for Thanksgiving. They are the PERFECT bite of pecan pie. Even non-lovers, like me, love these truffles!
