No-Bake Cake Batter Truffles!

It’s Foodie Friday y’all! I’m here with a quick and easy dessert for you to try this summer. Anyone have a summer birthday? ::raises hand:: ME! In fact, both my kids are summer babies as well. So, to help celebrate all the birthdays this summer, I decided to whip up some No-Bake Cake Batter Truffles! YUM!

This recipe is REALLY simple. You can use any cake mix you’d like. We picked Pillsbury Funfetti cake because SPRINKLES! 😉

  • 1/2 cup softened butter
  • 1 1/2 cups cake mix
  • 1/2 cup sugar
  • 1/2 cup all purpose flour

That’s it for the filling!

Blend the ingredients up until a dough forms. Speaking of birthdays, check out new present! Isn’t she a beaut?! Another reason to whip up some truffles. I had to take my new mixer for a test drive! 😉

After the dough has formed, I stirred in two extra tablespoons of sprinkles. Can you ever have too many sprinkles? (That answer is NO in this house!)

Using a cookie scoop or tablespoon, scoop out your truffles. If you need a big batch, I recommend doubling the recipe OR using a smaller scoop. My truffles ended up being about the size of cake pops and I got 18 out of the dough.

Stick them in the freezer for 15 minutes. Or if your pan doesn’t fit (like mine! HA!) they can go in the fridge for 30-45 minutes. I used vanilla almond bark for the coating, but you can use candy melts, melting chocolate, or even chocolate chips for your top layer. I used 5 blocks of almond bark and 1 teaspoon of vegetable oil for a nice shine.

Dunk your truffles and using a couple forks set them back on your cookie sheet. Add a few extra sprinkles to the top for decoration, if desired.

How cute are these guys? I put them back in the fridge for at least 10 minutes before serving.

These truffles were so incredibly simple to make. Did I mention they were NO BAKE? Try them out with your favorite cake mix! I think my next batch will definitely include some dark chocolate. Enjoy! And Happy Birthday to all the summer babies this season!
