Creamy Italian Chicken Fettuccine

The last week has been cold, raining, windy, cold, stormy, and did I saw cold? And we are also expecting snow this weekend! There is something about when the weather is extra cold or wet, it always seems to be more bearable with comfort food in hand.  Thankfully my crock pot is the master of comfort food! Nothing like having the wonderful smell of a hearty meal cooking filling the air to get the belly ready for some hot food on a cold day!

And this Creamy Italian chicken served over fettuccine is the ultimate comfort food.  Add your favorite veggie side dish and some garlic bread and dinner will be complete!

This meal is so good that my eight year old requests it all the time! 

To get started you will need…

Creamy Italian Chicken Fettucine

  • 2 to 3 chicken breasts (fresh or frozen)
  • 2 TBSP butter
  • 1 packet of your favorite dry Italian salad dressing mix
  • 1/2 cup hot water
  • 8oz block of cream cheese (reserved until the end)
  • fettuccine noodles

Prep your crock pot, I spray mine with non-stick spray and turn on so it can warm up as I’m prepping the other ingredients.

First, In a cup or bowl, mix the dressing mix with the hot water. Then in the crock pot toss in the chicken, butter, then pour the water mix over. Use a spatula to get all the seasoning goodness from the glass!

Top with the lid, and if using fresh chicken, 4 hours on HIGH or 6 on LOW, for frozen 8 hours on HIGH or 6 hours on HIGH.

Now before serving, shred the chicken in the crock pot and add the block of cream cheese, replacing the lid to allow the cheese to melt while you prepare the noodles and any side dishes.

Now a little trick with this recipe is if your cooking for a larger crowd or just need to stretch the meat further, add one can of cream of chicken soup. It also makes great leftovers so if you need another quick dinner during a busy week, add the soup and you’ll easily have enough for a second meal when you need it!
