Mountain Dew Pound Cake

Tis the season for goodies! This time of year my family and I love to experiment with many different baking recipes. Pound cake is a staple all year round. This Mountain Dew pound cake recipe is easy and deliciously light. Make it this holiday season or save the recipe and make it anytime you’re in the mood for a nice light pound cake. 

First, let us gather all our ingredients:

Cake

1 1/2 Cups Butter (room temperature)

3 Cups Sugar

1 Tablespoon Lemon Extract

1 Teaspoon Vanilla Extract

5 Eggs

3 Cups All-Purpose Flour

1/2 Teaspoon Salt

3/4 Cups Mountain Dew

 

Lemon Glaze (optional)

2 Cups Powdered Sugar

2 Tablespoon Lemon Juice

1/2 Teaspoon Vanilla Extract

2 Tablespoon Mountain Dew

 

Instructions

Preheat oven to 325. 

Grease a large bundt cake tin (at least 12 cups). Make sure to grease very very well so that you have no issues getting the cake out.

In a large bowl put in the sugar and butter.

Mix them together well.

Add in the Lemon and Vanilla extracts and mix.

Add eggs and mix them in well.

Add flour and just mix well enough to where the ingredients are combined.

Add Mountain Dew and mix the cake well for 1 min. 

Pour mixture into the greased bundt cake tin.

Place in the oven for 60-70 min. Or until the cake is golden brown and a tester or butter knife can be inserted and comes out clean.

Once done remove the cake from the oven and let sit in the tin for 10 min.

Flip cake out and enjoy! Or add a glaze.

 

As you can see I didn’t grease my pan well enough so my cake got stuck a bit on one side. I did get it out successfully finally without too much damage. This cake is really good plain. Half of my family preferred it without the glaze. I think this cake would be great with some berries and cream. This cake is light and lovely. This basic recipe can be experimented with by changing the soda flavor. This recipe is a good one to add to your stash!
