I went a little coconut crazy this week y’all! It’s my mom’s birthday week and she LOVES coconut so I decided to whip up a couple easy coconut Easter/Spring desserts!
First up are these adorable coconut macaroon nests. The recipe is incredibly simple! I even cut it in half so I’m not eating all these cookies by myself. Ha ha!
Preheat the oven to 350. Spray a mini muffin pan with non stick cooking spray. Mix together two egg whites, 1 tablespoon of sugar, and a pinch (1/2 teaspoon) of salt. Add half a bag of shredded sweetened coconut (7 oz.) Add the coconut mixture to the pan and using your thumb, press down the sides and middle to make a little nest!
Bake for 25-30 minutes until golden brown. My coconut starting getting a little brown after 15 minutes, so I covered it in aluminum foil as not to burn. It worked perfectly!
Let them cool for about 10 minutes and then while still warm, add your choice of candy! I used mini chocolate eggs, but you can use your favorite Easter candy. So cute!
Next, I made dark chocolate covered coconut cream eggs. Holy sweet goodness! Plus, it’s a no-bake recipe. BONUS!
With a hand mixer, cream together 1 package (8 oz) of softened cream cheese and 1 tablespoon of softened butter. By hand, add 1 cup of coconut and 4 cups of powdered sugar. I added the sugar a little at a time because it can be messy. Just when you think it’ll never come together, it works! Refrigerate the mixture for at least 30 minutes so they’re easier to mold.
Mold your mixture into egg shapes. This was SUPER messy, but fun. I only got 11 eggs out of my recipe because a couple of them got a little large. 😉 Freeze the eggs for at least 2 hours.
In the microwave, melt 2 cups of your favorite chocolate chips (I used dark chocolate!) with a tablespoon of butter. Dunk your frozen eggs into the melted chocolate. Once again, this was super messy! It was just that kind of day for me! I decided to add some multi-colored sprinkles to some for the boys, but left the rest plain for… Me. Muahaha!
Had to test one out for quality control, of course. Luckily, it passed. 😉
