Pumpkin Dip for the Holidays

With the holidays right around the corner it is always a good idea to have a delicious appetizer recipe on hand! Check out this simple dish using some of my favorite pita chips, Stacy’s Multigrain! Have an extra can of pumpkin puree? Well, this is the way to use it! An unexpected, fun dip that will make any get together even better! Tis the season for everything fall! What you need:

  1. In a food processor fitted with a metal blade, combine pumpkin, ricotta, oil, lemon juice, garlic, cumin, salt, pepper, cinnamon and coriander; blend for 1 to 2 minutes or until well combined and smooth.
  2.  Scrape dip into shallow serving bowl; refrigerate for 30 minutes. Drizzle with maple syrup and sprinkle with sunflower seeds and parsley. Serve with pita chips for dipping.
