Grilled cheese are my absolute favorite comfort food. Always have been, always will be. Now served with a cup of hot tomato soup for dunking instead of ketchup like when I was a kid, grilled cheese have come a long way from the basic white bread, butter, and sliced cheese. My husband loves to add ham, bacon or peppered turkey to his to beef it up. So one day, while staring into the abyss that is my fridge at all the leftovers, random bits of groceries and with no idea in my head as to what to make. Then my kids asked for a grilled cheese as I was grabbing a container of leftover sloppy joe meat.
Inspiration struck because we were out of buns but had everything for grilled cheese… See where I’m going with this…
It’s gooey. Cheesy. Savory. And extra hearty and filling.
To make one you will need…
- sliced bread
- 2 slices of your favorite cheese
- sloppy joe mix
- butter
Place one buttered piece of bread down in a medium high skillet (the key to a great grilled cheese is the crust, and cooking low slow over medium heat allows it to get perfectly golden brown while the cheese melts. Next, add one slice of your favorite cheese, then simply place a spoonful of sloppy Joe mix on top of the one piece of bread and cheese, top with the second piece of cheese and the remaining piece of bread.
Slowly flip as to not spill the contents. Cook until golden brown on the other side then remove and let cool for a few mins.
Then serve with a salad and you have yourself a delicious and quick meal!
