Slow Cooker Chicken Tacos with Old El Paso Bold Nacho Cheese Crunchy Shells

Now that the holidays are over, and life has gone back to normal, our crazy schedule has crept back up on us. Between school, work, playdates, trips to the park, karate and after school clubs, I sometimes find myself at the dreaded dinner O’clock hour with nothing to make! And I know that I’m not the only one this happens to.

This is where my wonderful slow cooker comes into play! It is my kitchen BFF! I think everyone should have one! I use mine several times a week, even in the summer. No one wants to be slaving away over a hot stove during the dog days of summer! But I have to say it truly has earned its keep during the school year. It’s a must have for quick weeknight dinners.  Plus clean up is always super easy, which is an added bonus in my book.

These slow cooker tacos are a staple in our house! It’s quick to prep, requires little effort in the actual cooking department, and can be finished up in less than 30 min.

But what makes these tacos extra special for us, are the nacho cheese crunchy shells!

Ingredients

  • 1.5/2 lbs boneless skinless chicken breasts or thighs (I used a combo of both)
  • 1 cup chicken broth
  • 2tbsp taco seasoning
  • 2tbsp dry ranch seasoning
  • Old El Paso Nacho Cheese Crunchy Shells
  • Plus toppings of your choice.

We used shredded cheddar and pepper jack, lettuce, sour cream, salsa.  I like to use what toppings we have on hand to make it truly a quick meal that doesn’t require an extra trip to the grocery store. So start with spraying your slow cooker with a nonstick spray. Then place your chicken in the crock pot. You can use thawed chicken or frozen straight from the freezer. I’ve always used frozen and never had any issues and it’s always been more convenient to my schedule. Mix the broth with the taco and ranch seasoning. Pour over the chicken, making sure you scrape out all those last bits seasoning in the bowl. Cook on High for 3 hours or low for 6 hours.

When ready for dinner go ahead and shred directly in the slow cooker and let the chicken sit in the broth while you prep all your other toppings, then drain.
