Okay guys, I had SO much fun with this meal. I wanted to stick with a warm and comforting November theme, but also have a little fun. My boys have never been to Medieval Times or any Renaissance Faire, but I KNOW they’d love it. I whipped up a quick a dinner with easy ingredients from my commissary and even added a grown-up drink so my OCD wouldn’t kick in when I let the kids eat with their hands! HA!
I love a good one pan meal and this is no exception. I bought a large pack of cut-up chicken, a couple bags of baby potatoes, and used my favorite seasonings: smoked paprika, garlic & onion powder, salt & pepper, but you can use what you love! Rub the chicken with olive oil and your spice mix. Lay the potatoes on the pan and drizzle with olive oil. Place the chicken on the pan and pop in the oven! It’s that easy. I baked them at 375 for an hour, keeping an eye on the internal temperature of the thickest part of the chicken breast. Once that hits 165, you’re good to go! Let it rest for 10 minutes before serving.
When I told the boys we were eating with our hands, they flipped! Just make sure you have LOTS of napkins ready to go! 😉
I decided to go with a yummy, warm spiced wine for the adults. It was incredibly easy and PERFECT for the holidays! Use your favorite red wine, 2 cups of pomegranate juice, orange zest + sliced oranges, a knob of ginger, and cinnamon sticks. YUM! If you like it a little on the sweeter side, I’d add 1/4-1/2 cup of sugar (to taste.) Let it simmer until you’re ready to serve. You can leave this on the stove all day and it smells AMAZING!
We had a blast eating dinner with our hands and laughing our heads off while going through a TON of napkins. Maybe next time we’ll add some good old fashioned jousting after dinner. 😉
