The holidays have arrived, and I have to be honest, this is my favorite time of year! If you are like me, I am always trying to find a new and fun way to jazz up those classic holiday recipes. I am in charge of a couple of side dishes this year so of course I want to make something that my family will love. I came across a recipe for Coca-Cola Candied Sweet Potatoes at http://www.coca-colacompany.com/food and instantly fell in love. I mean honestly, I can’t think of a better way to spice up sweet potatoes than by adding the sweet, refreshing taste of Coca-Cola.
Ingredients:
•2 Pounds sweet potatoes chopped into eighths
•2 Cups Coca-Cola (less for a drier dish)
•½ Teaspoon salt
•¼ Teaspoon grated nutmeg
•¼ Teaspoon cinnamon
•0.13 Teaspoon vanilla extract
•3 cloves
•3 Tablespoons butter
Preparation
•Preheat oven to 400 degrees. Bring all ingredients except for butter and sweet potatoes to a boil in a large oven-friendly pot. Turn heat down to medium and stir in butter and sweet potatoes. Bring back up to a boil, remove from heat, cover and place in oven and bake for 20 minutes. Remove lid and bake until tender.
Okay, first off, this recipe will definitely be making it to our Thanksgiving table! Second, my husband wanted me to make more after we ate the first batch. And third, I think this is for sure a recipe that is going to be asked for from everyone in my family!
