Dinner time is the bane of all parents days. I always have ideas of what I want to serve, and even make my menus. However, we all have those days that get away from us, and before you know it, its almost five in the afternoon and your meat is still in the freezer. This happens to me more than I care to admit! With the beginning of the college semester, I now have several students that I am teaching, on top of teaching my own kids here at home. Quite often, my day ends up with the “how is it 430 and I am still in pjs!?” PJ day does not happen often, but we have all those days that we are running from the time we get out of bed until the time we are ready to crawl back into it.
I love having some easy meals on deck that I can use as my go to meals. We have fallen in love with the Bean and Cheese burritos. Kid and hubby approved (and I think the dog approves as well), but its something that I can slap together and pop into the microwave. I usually make about 15-20 of these, and then stick whatever we don’t eat in the fridge for lunches over the next few days.
Here is what you need:
- Burrito sized tortillas
- Old El Paso Refried Beans
- KRAFT shredded cheese
Directions:
- On your tortilla, spread a large spoonful of refried beans
- Add a small handful of shredded cheese
- Fold, wrap in a napkin, and put into the microwave for a minute (you can adjust time to your preferred temperatures)
You can add: Salsa, Sour Cream, Lettuce, Avacado, Onion, Jalapeno, etc. onto your burritos, or just serve them as is. My kids enjoy them simple, as do I. But from time to time we jazz them up a little bit. Easy peasy meals!! Forget doing dishes, grab those paper plates from CHINET and some plastic silverware, and throw it all away!These have been a easy meal since I was a kid, and I just carried on the tradition with my children! If you are in college, these are also a cost effective meal – a nice change from noodle dinners!
