Make an Easy Coconut Pie this Foodie Friday

This summer has been filled with sunshine, swimming at the beach, and friendly BBQs with family and friends. But what happens when you forget about the dish you’re supposed to bring to your next get together? ACK! Today, I have the solution. An incredibly easy and sinfully delicious coconut pie! This is my mom’s recipe and it is a winner! Pop this beauty in the oven and in 45 minutes, you’ve got a beautiful dessert to take to your next potluck. Best of all, there are only SIX ingredients! Anyone can make this tasty pie!

Easy Coconut Pie

  • 1 cup shredded, sweetened coconut
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/3 cup of melted unsalted butter
  • 1/4 cup buttermilk (I never buy a huge thing of buttermilk so I make my own by adding 2 teaspoons of white vinegar or lemon juice to milk. Easy!)
  • 3 eggs
  • 1 Pillsbury pie shell

Preheat the oven to 350 degrees. Mix all your ingredients together.

Roll out your Pillsbury pie crust into a glass pie dish.

Pour your coconut pie batter into the crust. There’s no need to pre-bake the pie shell!

Bake at 350 degrees for 30-45 minutes. The top should be lightly golden brown and when inserted in the center, a toothpick should come out clean.

There now, wasn’t that easy peasy? It will make your house smell amazing and everyone in the family will come in the kitchen looking to see what you’ve got baking! Try to keep their hands off it until your potluck or BBQ! This pie is sweet, coconutty, slightly chewy, and that flakey pie crust? Yes, please!! If you decide to leave the pie at home and just bring a bag of chips to the party, I would totally understand. 😉 This pie is THAT good!
