4 Back to School Make Ahead Recipes

The summer is finally winding down here in Georgia and we’ve got our sights set on the beginning of the new school year. I can’t believe my kids go back in two weeks! To keep myself and everyone else from stressing out about it, I’m going to start prepping a few make ahead recipes once a week to make it easier on all of us! I’ve got some really easy and yummy ones for you to try today! Each recipe works great as a meal or after school snack. For even more snack ideas, check out this blog here!

Froyo Breakfast Bites

  • Granola, such as Nature Valley
  • Your favorite flavor of yogurt. I used Yoplait Mixed Berry
  • Honey
  • Frozen berries, optional

Mix one cup of granola with a tablespoon of honey.

Drop a spoonful of granola into a lined mini muffin pan. Add a spoonful of the yogurt on top, until filled.

Top with a frozen berry and put the pan in the freezer. These bites are great for a breakfast on the go!

Next up I made some No Bake Energy Bites!

  • 1 cup Quick Oats
  • 1/2 cup ground Flax Seed (You can use shredded coconut, chia seeds, or more oatmeal also)
  • 1/2 cup mini chocolate chips
  • 2/3 cup peanut butter (almond butter or any nut butter may be substituted)
  • 2-3 Tablespoons of Honey
  • Dash of cinnamon or your favorite spice (nutmeg, cardamom, pumpkin spice, etc)

Mix all ingredients together, adding more honey if needed. The mixture should hold together. Roll into balls using your hands or a cookie scoop.

Refrigerate until firm or freeze them. Store them in a container in the fridge for a bite of quick energy before headed to the bus stop! These are also a great snack during homework!

BLT Sliders with Creamy Honey Mustard

  • 6 pieces Oscar Mayer bacon, cooked, drained, and cut in half (can be doubled for extra bacon tastiness!)
  • 12 dinner rolls
  • 12 slices of tomato
  • 12 small lettuce leaves

For the creamy honey mustard, simply mix a couple tablespoons of Miracle Whip or mayo with yellow mustard and honey to your liking.

Slice each bun in half and add your mustard to the bottom. Top with half a piece of bacon, lettuce, and tomato. Repeat with the rest. Sliders are SO easy and delicious. They’re also completely customizable! Fill with scrambled egg & bacon for breakfast, ham & cheese, or even peanut butter & jelly. These sandwiches are GREAT for little hands and lunch boxes.

A 12 pack is a great QUICK dinner for my family of four. Add some baked chips and potato salad and everyone is happy!

Cheesy Pizza Rounds

  • Pillsbury pizza crust
  • Tomato sauce or pizza sauce
  • Kraft shredded Italian blend cheese

Preheat the oven to 350 degrees. Roll out the pizza crust into a rectangle. Top with sauce and cheese. If it’s plain tomato sauce, add your favorite Italian seasonings, such as basil and oregano. Top with cheese. Roll carefully and slice the log into even pieces. Place on a parchment lined baking sheet and bake for 15-18 minutes.

I kept them super simple with just sauce and cheese, but you can your favorite pizza toppings. Or try it with ham and cheddar cheese! Great to eat at room temperature, which means you can pull two from the fridge and pack them in a lunch box for a filling school lunch.
