Soup To Warm Your Belly…

This Fun Foodie Friday I’m sharing with you a favorite soup of mine! It’s technically a paleo recipe a friend shared with me a few years ago, and I’ve seen a few versions of it floating around Pinterest, but this is MY version after years of tweaks! I love that it’s simple and no crazy ingredients, but packs a powerful punch in the flavor department! Which is how soups should be!

It’s so good it’s become a staple in my meal prep rotation! It can easily be doubled or more, to feed a crowd. I personally like to keep it small and portion out the rest for quick lunches during the week! And it’s DELICIOUS over fresh spinach! My kids even like it and eat it with no complaints! So come on, give it a try!

You will need…

1 pound boneless skinless chicken breasts
4 cloves garlic, minced
1 (14 oz) CANNED coconut milk (full fat)
1 cup chicken broth
1 (14 oz) can diced, Italian seasoned tomatoes (plus the juice)
1 8 oz can Italian seasoned tomato sauce
2 tablespoons dried Italian seasoning
1 tablespoon dried basil
1/2 teaspoon EACH salt and pepper (more to taste)

 

Now COCONUT MILK you say? YES! Coconut milk! It’s what makes it a clean, paleo friendly meal, and I promise it does not taste like coconut soup! After the additon of all the Italian herbs, and four cloves of garlic, you can’t even tell there is coconut milk added!

Toss it all into your crock pot on low for 8 hours to get the chicken good and cooked. Then just before serving, stir the soup, shred the chicken with two forks directly in the crock pot (no need to remove it and dirty another plate) and serve!

I like to add one cup of soup over a bowl of fresh spinach and stir to wilt the spinach! It’s healthy and hearty, just the way soup should be!
