Nilla Wafer Cinnamon Snack Mix

In my daughter’s preschool class the parents take turns sending in snacks for all of the students once a month. This way the parents don’t have to worry about packing an individual snack for their child every day and really, the burden to send in a bag or box of something once every four weeks isn’t bad at all. I ask my daughter every afternoon what she was given for snack and I’ve heard every store bought concoction you could imagine: carrots and cheese sticks, apples and crackers, yogurt and grapes, blueberries and muffins… you get the idea. What I noticed is that nothing is ever homemade, and I understand why. Parents are busy!! But I made it a point to challenge myself. What I needed was a SIMPLE snack I could throw together in a jiffy that would taste much better than plain ‘ole boxed munchies found on aisle 5. And I found just that!

NILLA-Cinnamon Snack Mix! To be completely honest, I was quite curious to hear feedback on whether or not the preschoolers really enjoyed this blend of Nilla® Wafers, pretzels, and yogurt raisins or not and apparently… they DEVOURED it! I made sure to bring in extra so every child could have a nice amount and I learned that second servings were being asked for all around until the entire batch was gone. I call that a success!! The best part of it all – it’s made with quality ingredients and takes 20 MINUTES to make. That’s it!! And can be halved or doubled for smaller or larger quantities. You have to give this a shot, and make sure you get a taste, too, before it’s all gone!

This is all you’ll need:

  • 3 cups NILLA® Wafers
  • 1 cup pecan halves*
  • 1 cup pretzel sticks
  • 3 Tbsp. butter or margarine, melted
  • 2 Tbsp. sugar
  • 1 tsp. ground cinnamon
  • 1/4 tsp. kosher salt
  • 1/2 cup yogurt-covered raisins (or chocolate-covered raisins, if preferred)

*If taking this to school, make sure there are no peanut allergies!

Step 1) Heat oven to 375ºF. Combine the first 3 ingredients in large bowl. Mix butter, sugar, cinnamon and salt. Drizzle over wafer mixture; toss to coat.

Step 2) Spread onto bottom of foil-lined 15x10x1-inch pan. Bake for 10 minutes or until lightly toasted, stirring after 5 minutes.

Step 3) Cool. Stir in raisins.

Store in an airtight container at room temperature.
