Yay, it’s time for another Nerdy Nibbles! 😉 I have a lot of fun picking out fun little recipes based on different pop culture references, and this week was no exception! I really like making recipes that coincide with the month or holidays so this month I wanted to make something warm and delicious that could be used for a holiday breakfast or dessert. Easy! I’ve had Harry Potter on my mind for Christmas, but decided to try something from the newer movie, Fantastic Beasts and Where to Find Them. If you haven’t seen it yet, well, it’s FANTASTIC! I was inspired by Hungry Forever to try Queenie’s Apple Strudel from the movie. I absolutely adore Queenie’s character! While I couldn’t whip this up with a flick of my wand, it is easy enough for beginners to make. And it’s delicious!
Queenie’s Easy Apple Strudel
- 3 Granny Smith Apples, sliced
- 1 Granny Smith Apple, grated
- 1 cup Brown Sugar
- 1 teaspoon Cinnamon
- 1/3 cup Slivered Almonds
- 1 cup Raisins, optional (My family is adamantly against raisins so I left them out!)
- 1 sheet Puff Pastry, thawed
- 1 Egg
- 1/4 cup Milk
To begin, preheat your oven to 400. Mix the apples, brown sugar, almonds, and cinnamon in a bowl. Add the raisins, if you’re using them! Set the bowl aside and grab your puff pastry sheet.
I rolled mine out on a sheet of parchment paper so I could lift the paper onto the baking sheet with relative ease. Roll out the pastry into a rectangle and fill with the apple mixture.
Wrap the dough around the apple mixture and be sure to seal the seams. Cut off any excess dough if there is any.
With the excess, or the extra sheet in the box, you can make your strudel decorations. These are totally optional, but a lot easier than I expected! It was fun to play around the puff pastry. I sliced the sheet and then rolled each strip into a flower. I also braided 3 strips and used them to decorate the strudel.
Now that your strudel is filled and decorated, whisk the egg and 1/4 cup milk into a bowl and brush the strudel with the egg wash before baking. This will make it golden, crispy, and shiny!
Bake at 400 degrees for 40 minutes. Allow to cool before slicing. I had a little bit of leakage from underneath, but the apples inside were moist, sweet and so delicious. The pastry is crisp and flaky. Sprinkle with powdered sugar if you remember to do so before slicing into it. As you can see, I was impatient and totally forgot! You could serve this with a cup of coffee on Christmas morning OR with vanilla ice cream after dinner. It’s amazing! Not bad for my first strudel!
