Welcome to Foodie Friday! I don’t know about you, but I am SO ready for Spring!! I’m over the super cold winter weather. I’m ready for sunny mornings and warm evenings. Who’s with me? Today, I whipped up some super easy Apple Pie Bites. The warm spice and tart apples are perfect for easing into any season. You’re gonna want to keep this recipe handy. These make great after school snacks, desserts, or even a Saturday morning breakfast!
Apple Pie Bites
- 2 tubes of Pillsbury Crescent Rolls
- 1/2 cup Brown Sugar
- 1 teaspoon Pumpkin Pie Spice (if you don’t have any, you can use any combination of cinnamon, ginger, allspice, nutmeg, clove, or cardamom)
- 1-2 large apples, I used a Honeycrisp
- 4 tablespoons butter, melted
- Chopped pecans, optional
- Crumbled bacon, optional (but totally worth it!)
Preheat the oven to 375 degrees. Line a baking sheet with parchment paper. Slice your apple into 16 slices. You may need two apples depending on their size. Add them to the melted butter and stir. In a separate bowl, mix together the brown sugar and spices. On the parchment, lay out the crescent roll triangles and layer each of them with a spoon full of sugar. Top with pecans and bacon! Place an apple at the wide end of the crescent roll and slowly fold them over. Then bring the skinny end up and over.
Bake them at 375 for 12-15 minutes until golden brown. Your house will fill with the unmistakable aroma of that sweet apple pie. These little apple pie bites are great with a little whipped cream on top! Or if you’re feeling sassy, with a cup of coffee in the morning. There is bacon in it after all!
I really love the sweet softness of Pillsbury Crescent Rolls! They bake just long enough so the apple is soft but not mushy. The brown sugar melts into a sweet sauce that goes great with the salty, smoky bacon. Top it off with the crunchy bite of pecan and you have the perfect snack!
