Avocado-Shrimp Salsa

When it comes to laying out the best spreads at gatherings, having delicious finger foods is an integral part of the layout. There is no need to stress over fancy recipes that take hours to make. Grab this simple recipe and give it a go! Easy to put together, and leaves you plenty of time to work on other things for your party before the guests arrive. You can even make this the day before and put into the fridge! Perfection!

When I first found this recipe, I was a little nervous about serving it. I love both avocado and shrimp, but I was not sure how it would be mixed together. I should not have worried. It was AHHH-MAZING! Literally melt in your mouth wonderful. I could have sat and hoarded the entire bowl for myself, but sharing is caring. I have been asked for this recipe more than any of my other dips! Keep this one handy for sure!

This recipe can be made year round! YAY!

What You Need

  • 1/2 lb. cooked cleaned medium shrimp, chopped
  • 2 avocados, chopped
  • 1 small English cucumber, peeled, chopped
  • zest and juice from 1 lime
  • 1 can (15 oz.) corn, drained
  • 2 small Roma tomatoes, seeded, chopped
  • 1 large fresh jalapeño pepper, finely chopped
  • 2 Tbsp. finely chopped fresh cilantro
  • 1 tsp. kosher salt

Instructions

  1. Combine ingredients.
  2. Refrigerate 3 hours.
  3. Serve with RITZ Crackers, WHEAT THINS Original Snacks and/or TRISCUIT Thin Crisps.

Makes 48 servings, 2 Tbsp. salsa each.

**TIP** Place both avocado pits in the salsa before refrigerating. This will help prevent the salsa from turning brown. Discard pits before serving the salsa.
