Cookies & Creme Pudding Pops

I have seen stores already stocking the shelves with Halloween decorations 🎃 and pumpkin flavored this and that, can you believe it!? I want to scream NO! every time and stand there and pop anyone’s hand that tries to reach to grab something from the shelf. Don’t take away my summertime 🌞 just yet!!! I mean seriously, it’s hot out and people can’t wait for it to get cold… but then the minute it’s cold people are begging for it to become warm again! Why can’t we just enjoy what is!?

That’s okay, no one can steal my sunshine. I walked my daughter to the bus stop this morning and it was 77 degrees out at 7:15 a.m.! Fall is not upon us just yet! We still have plenty of time for camping, drive-in movie theaters, swimming pools, and POPSICLES!

Now that school has started, both of my daughters seem to come home famished. I suppose exercising your brain all day is a pretty legit reason to be hungry. 😉 I try to have little snacks prepared ahead of time so they can grab something yummy as soon as they walk in the house but recently it’s been SO nice outside that my daughters come in, drop off their backpack, grab some food, and then head right back out! I got to thinkin’… we need a snack that would be perfect for the warm weather! Something that I can prepare ahead of time, that is easy to grab on the go, and that will keep my kiddos cool.

I remembered my mother used to freeze pudding into popsicles when I was younger so I wanted to try something similar, but with a few extra touches. For example… Oreo® crumbles and creamy Cool Whip®! What a perfect treat after such a long, exhausting day full of learning, right!? My kids absolutely love these Cookies & Creme Pudding Pops and I now keep them on-hand constantly. The recipe only requires six Oreos® so once you buy a pack from the commissary you will have enough to make dozens of pudding pops which you will end up doing, trust me!

This is what you’ll need:

  • 1 pkg. (3.9 oz.) chocolate instant pudding mix
  • 2 cups milk
  • OREO® Cookies
  • 1/2 cup thawed COOL WHIP® Whipped Topping

Instructions

  • BEAT pudding mix and milk in large bowl with whisk 2 min.
  • PLACE cookies in resealable plastic bag; seal bag. Use rolling pin to crush cookies.
  • ADD cookies and Cool Whip® to pudding; stir just until blended.
  • SPOON into 9 (3-oz.) paper or plastic cups. Insert wooden pop stick or plastic spoon into each for handle. Freeze 5 hours or until firm.

My next experiment… using RED VELVET Oreos® with cream cheese flavored creme! YUMMM!!!
