It’s the first Nerdy Nibbles of the new year! So fun! I hope everyone had a great holiday break and you’re ready to tackle 2018 head on! I know we are. My first nerdy recipe of the year is so cute and fun. It’s great as an after school snack, dessert, or even party snack! This popcorn is inspired by Nerdy Mamma (a gal after my own nerdy heart!) She made some pretty “Unicorn Popcorn” but I have boys and they don’t care much for unicorns. So Super Fun Rainbow Popcorn it is! 😉 Look how bright and awesome it is!
The ingredient list is short, but there is some prep work you have to do to make this recipe run smoothly. I decided on 4 colors so I made sure I had 4 large mixing bowls ready and 4 sheet pans covered in foil ready. You’ll need them!
Super Fun Rainbow Popcorn
- At least 2 cups of popped popcorn per color! This can be store bought or popped at home. I pop mine in a large pan on the stove
- 2 cups of sugar
- 1/2 cup of water
- 1 teaspoon vanilla
- 1 tablespoon canola oil
- 1/2 teaspoon salt
- At least 4 different food colorings
- Sprinkles, optional
While your popcorn is a-popping, add the sugar, water, vanilla, oil, and salt to a saucepan and bring to a simmer.
Once the sugar has dissolved, separate the mixture evenly into each bowl. I used 4 colors so 1/2 cup of mixture for each bowl. Add a food coloring to each bowl and mix thoroughly.
Add your popped popcorn to the colored syrup and stir until the popcorn is completely coated. Lay it out on a foil lined sheet pan. Decorate with sprinkles, if desired. I used silver sprinkles which added a fun little crunch to the popcorn.
Repeat the process with the remaining colors. Allow the popcorn to air dry for at least 2 hours until it’s dry and crunchy!
How pretty did these colors come out? Can you tell which color my 6 year old liked the most? He swore up and down they tasted different. HA HA! The popcorn is sweet and super crunchy and so much fun to snack on!
