Harry Potter Pumpkin Party with Nerdy Nibbles

Hey everyone! It’s September, which means it’s ALMOST October and that’s close enough to Halloween for me! 😉 As a family, we LOVE Halloween. It’s one of our favorite holidays and I especially love to throw a themed Halloween party. I’m thinking Harry Potter this year so I decided to test out a few recipes. There are so many recipes you can make from the Harry Potter series that I ended up narrowing it down even more to just pumpkin! It is almost Fall after all!

First up, Pumpkin Pasties! I used a short cut (canned biscuits) which made these delicious hand pies super easy to whip up!

Pumpkin Pasties

  • 1 can of pumpkin puree
  • 1 can Pillsbury Grands biscuits
  • 1/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • Flour for dusting

Preheat the oven to 375 degrees. Mix together the pumpkin, egg, sugar, vanilla extract, and pumpkin pie spice. Lightly flour your working surface and open your biscuits. Split each biscuit in half. This is really easy if you use the flaky Grands. This will give you 16 hand pies!

Gently roll out each biscuit and add a small spoonful of the pumpkin mixture. Fold over the dough and use a fork to seal the edges and make it look pretty. HA!

Bake them at 375 for 12-15 minutes, until lightly golden.

Serve your pumpkin pasties with Pumpkin juice! Woohoo! These are great little handheld snacks, which are great for dessert or even after school! They’re just the right amount of sweetness!

I know pumpkin juice sounds funny, but it’s awesome! It’s actually made with apple cider and honey and so deliciously sweet and tasty. You have to try it!

Pumpkin Juice

  • 4 cups of apple cider
  • 1 cup of pumpkin puree
  • 1/4 cup of honey
  • 1 tablespoon vanilla extract
  • 1-2 teaspoons pumpkin pie spice (or you can use just cinnamon) depending on your taste preferences

Whisk everything together and serve! It’s great over ice and if I had whipped cream, I’d top each glass with some! Some separation is normal, so just mix it together before serving. It’s sweet and delicious with just a hint of pumpkin and apple. It’s really great, guys. You’ve got to try it!
